Chicken Cordon Bleu

Serves: 4
o 4 large chicken breasts
o 1-8 ounce package of Swiss cheese
o 1- 8 ounce package of sliced cooked ham
o 3 Tablespoons of flour
o 1 teaspoon of paprika
o 6 Tablespoons of butter
o ½ cup white cooking wine
o 1 cube chicken bouillon
o 1 Tablespoon cornstarch
o 1 cup Heavy whipping cream
Directions
Slice chicken on the widest side almost all the way through making a “sandwich with one side closed” Place o1-2 slices of ham onto the open chicken breast and then place 1-2 slices of Swiss cheese inside the ham. Fold the chicken breast over and stake with tooth pick if necessary. Whisk flour and paprika together in a mixing bowl. Place breasts in flour mixture and coat. Meanwhile melt butter in large skillet over med/high heat. Place chicken in hot butter and brown both sides. Add wine and bouillon and cover. Simmer for 30 minutes. Remove chicken to serving dish. Blend cornstarch and whipping cream until smooth. Gradually stir cream mixture into skillet with remains deglazing the bottom. Stir consistently until thick. Pour over chicken.
This is excellent and pretty easy to make. The only thing I changed was I did not cook it with the wine as I do not like wine. So I just used chicken broth instead. Came out excellent and very juicy.
